Apothecary Gin is produced using 10 different botanicals that are each individually distilled in a small copper pot still then married together to create a perfectly balanced dry-style Tasmanian gin. The main botanicals are juniper, coriander, several different types of citrus and some native Australian botanicals.
The gin is juniper driven with hints of citrus. It gives full mouth coverage and a crisp clean finish.
Serving suggestions: Best mixed with Capi dry tonic or East Imperial Old World Tonic (both available with The Gin Boutique). Garnish with a slice of dried ruby grapefruit. It is fantastic neat and also goes well in a classic gin & tonic, negroni, martini. It’s great with a dash of ruby grapefruit juice over ice.

Killara Distillery: Apothecary Gin is distilled at Killara Distillery in Goodwood by second generation Australian Distiller Kristy Booth-Lark (daughter of Bill Lark). The distillery is the first one in Australia to be owned and operated by a second-generation distiller (and a woman!). Kristy has over 18 years’ experience in the industry.
Kristy Booth-Lark has over 18 years’ experience in the distilling industry having worked for many years at her parents’ business (Lark Distillery) as both the head distiller and general manager. During her time there the whisky that Kristy produced won numerous awards both nationally and internationally. She decided to branch out on her own and continue the family tradition of producing hand crafted premium spirits in a friendly environment.
The name Killara is a nod to her parents, Bill & Lyn Lark who started the whisky (indeed the modern spirits) industry in Australia back in 1992. Killara is the name of the street where that first modern distillery was registered over 150 years after the last distillery in Hobart closed its doors and shut off its stills.
The still Kristy chose is similar to the one that stood outside her bedroom as she grew up and which prompted her to join the family business all those years ago. The Killara Distillery 600 litre copper pot still was made in Hobart by Aircon Industries in a traditional, but not usual shape, with the condenser being at the top of the still rather than at the side. This produces a smooth distinct spirit.
