Created to capture as purely as possible the essence of our garden in Summer, this is Distillery Botanica’s flagship gin. Featuring their hero botanical Murraya, which for many epitomises the distinctive smell of the Australian Summer garden, this gin features the fragrance of jasmine, the sweetness of honeysuckle, and the purity of orange blossom.
Master Distiller Peter Moore produces this gin using the increasingly rare process of ‘enfleurage’, a thousand-year-old French technique favoured by perfumers, which in this case extracts untainted perfume from the quintessentially Australian Murraya flower, to create its distinct flavour. “The method captures ingredients as purely as possible, without the use of heat, and makes the delicate Murraya come alive” says Moore. With cues of Jasmine, Honeysuckle and Orange Blossom, the gin distils the essence of a fresh Australian summer garden.
The process begins with Moore, whose decades of experience, understanding of botanicals and knowledge as a celebrated herb specialist, brings a finesse to extracting fine fragrances from the botanicals. He distils each one separately, respecting their special flavours and characteristics, before meticulously blending them together.
Distillation by vapour infusion to enhance the top aromatic notes of pine and herb maceration followed by traditional copper pot distillation to bring out the base woody and resinous characters.
Separate distillations occur for each individual plant in order to remove the undesirable aromas and flavours of the head and tail fractions – resulting in the perfect heart.

About Distillery Botanica: Philip Moore, the owner and distiller of Distillery Botanica has a background in horticulture and was the founder and manager of Renaissance Herbs – Australia’s largest wholesale herb nursery – for over 20 years, growing close to one million plants per year. Peter has a passion for plants, flavours and aromas both of food and drinks as well as botanicals. Thus, it was preordained that a private nursery specialising in hundreds of varieties of herbs would be a consequence of these consuming enthusiasms.
In 2007 Philip felt the need for a sea change and with the guidance of two books, the internet and the purchase of an extremely tiny still, initiated himself in the ancient art and science of distilling Since then he has won seven gold medals and six silver medals in prestigious international spirit competitions. The gardens which surround the distillery allow Peter to indulge his passion for plants and source botanicals for his range.
With such a passion, everything must be made from plants. No artificial flavours or colours will ever be allowed at Distillery Botanica and the botanicals used in their drinks are grown in their own garden whenever and wherever possible.
